Jollof Rice

Ingredients:
·2 cups rice
·2 cups water
·1 cup oil
·1 sliced onion
·1 chopped Green pepper(remove seeds)
·3 tbsp. tomato paste
·3 large fresh tomatoes
·½ piece ginger
·½ clove garlic
·½ tbsp. salt
·¼ tsp. curry powder
·¼ tsp. nutmeg
·1 Maggie cube(season

·1 tbsp. Paprika
Procedure:
Blend the onion with garlic ,and ginger and the tomatoes on the side
Add oil in non-heat resistant pot and heat oil
Saute the onion, garlic, green pepper, ginger for 3 mins.
add paprika
Add tomato paste and blended tomato
Add rest of spices
Let cook for 30 mins at mid high temp until 90% cook
Add Maggie to stew
Add 2 cups water
Let water bubble then add rice
Add salt to water
Cover the pot with the lid
Cook until rice is finished cooking if you want it soft add ½ cup of water
Serve with chicken and salad is optional

Procedure:
- Add rest of spices

- Add Maggie to stew
